PINK VANILLA CUPCAKES

Here is a simple recipe to support PINK OCTOBER against BREAST CANCER.

So, will you try and cook these delicious cupcakes?

PINK VANILLA CUPCAKE

 

Ingredients
120 g flour
100 g of sugar
100 g butter
2 large eggs
1/2 sachet of baking powder
1/2 sachet of vanilla sugar
1 teaspoon vanilla extract


Ingredients for Vanilla Cream Icing
170 g of mascarpone
70 g powdered sugar
A knife tip of pink food coloring (gel or powder)
Some red fruits

 

                                                                                        

Preparation
Step 1

Strain the flour and  baking yeast through a sieve to obtain a perfectly smooth dough and set aside.

Step 2
In a bowl, blanch the sugar, vanilla sugar and eggs by beating them vigorously by hand or with a mixer.

Step 3
Pour the vanilla extract and the melted butter into this preparation.

Step 4
Add flour and baking powder and mix well until smooth.

Step 5
Pour the mixture into 1/4 of the edge of the paper boxes, as it swells during cooking.

Step 6
Place in the silicone muffin tin and bake at 180°C for 20 minutes.

Step 7
While waiting for cooking, prepare the glaze by mixing the rest of the ingredients: mascarpone, sour ice, and food colouring. A tip, to avoid getting a liquid topping, do not stir too long, then set aside for a few minutes in the fridge.

Step 8
Leave the cupcakes to cool on a wire rack as soon as they come out of the oven, then place the frosting in a piping bag with a fluted tip.

Step 9
It is possible to decorate the topping by adding some red fruits on top.
